10 Healthy Vegan Snacks

Snacks. My people want them every day! And, I don’t mind giving them a snack to tide them over between meals as long as it’s healthy. An apple, banana, or orange, a bowl of grapes or strawberries, and carrot and celery sticks are all snacks we enjoy at our house. But, sometimes we like to kick it up a notch or two and go all out with our healthy snacks.

Here are 10 healthy vegan snack ideas!

Krispy Kale Chips
Kale is a great source of vitamins K, A, and C. Place 1 large bunch of raw kale leaves, stems removed, on a cookie sheet, then drizzle with 1 teaspoon olive oil and a pinch of salt or nutritional yeast for a cheesy kale chip. Cook at 350 degrees until crispy, about 10 to 12 minutes.

Pop in an air popper or large pot on the stove according to package directions. Top with garlic powder or garlic salt, smoked paprika, nutritional yeast, sugar/salt, or a seasoning of your choice.

Chocolate-Drizzled Rainbow Kebobs
Place 1 strawberry, 2 blueberries, 1 piece each of kiwi, cantaloupe, and pineapple on a kebob stick, then drizzle with 1 teaspoon of melted vegan chocolate.

Healthy Nuts
Preheat the oven to 325 degrees. Mix 1 1/2 teaspoons ground cinnamon, 1 teaspoon ground ginger, 1 1/2 teaspoons vanilla extract, and 1 1/2 teaspoons extra-virgin olive in a large bowl. Add ½ c shelled raw walnut halves, ½ c shelled raw pecan halves, and ½ c raw cashews. Mix well, then place on baking sheet and bake for 10-12 minutes. Store in an airtight container once cooled.

I buy the steam-in-a-bag edamame and steam it in the microwave according to package directions. Sprinkle with sea salt and enjoy.

Rice Cakes with Banana, Peanut Butter and Cinnamon
Spread peanut butter over rice cake. Top with sliced banana. Sprinkle with cinnamon.

Rice Cakes Snack with Avocado, Tomatoes, and Hummus
Rice cakes aren’t just for sweet snacks – they can make delicious savory treats as well! Spread hummus over rice cake. Top with slices of avocado and tomatoes. Drizzle with a little balsamic vinegar or a pinch of sea salt.

Apple and Peanut Butter Sandwiches with Chocolate Chips
Slice the apple so that you have apple rings. Smear peanut butter on one ring of the apple. Sprinkle on 1 teaspoon of vegan chocolate chips. Top with a second apple ring making an apple and peanut butter sandwich.

Apples or pears with Peanut Butter rolled in granola
Slice apples or pears. Dip ends in peanut butter, then roll in granola.

Roasted Chickpeas
Roasted chickpeas are a great way to satisfy a chip craving, minus all that fat, and you get all the nutritional benefits of chickpeas — namely, fiber and protein.
